Today, I cooked my first rabbit. I love rabbit and don’t have it very often. When Oliver mentioned that they sell rabbit now, I couldn’t resist. Olivier, as any other real butcher would do, cut the rabbit into proper pieces for me. It was a pleasure to watch how he carefully went about his work while continuously talking to me. I didn’t forget that he mentioned to use bacon.
From my last trip to Switzerland I brought back white polenta from Ticino. The smooth and creamy texture and mild taste perfectly complemented the rabbit.
It was delicious. I am looking forward to the leftovers.
